It is the main component of vanilla bean extract. Synthetic vanillin is now more commonly used as a flavoring agent in food, beverages and pharmaceuticals than natural vanilla extracts.

 

Vanilla is one of the most popular flavors in the world. It comes from the fruit of the vanilla plant, which contains the beans or seeds from which vanilla extract is obtained. Vanillin is the main substance of vanilla bean extract and is responsible for the characteristic sweet taste of vanilla.

If you buy processed foods or beverages, always choose organic. Most organic cookies, while still not the healthiest food on the planet, usually contain pure vanilla. When baking, always choose organic vanilla beans or organic vanilla extract over artificial vanilla. Your health - and your taste buds - will thank you.

 

Generally, if you make vanillin with similar molecules from the petrochemical industry, vanillin is man-made. When microorganisms are used to make vanillin, the discussion becomes even murkier.
